Lions Mane Stroganoff

Lions Mane has a delicate and delicious taste which absorbs herbs & spices readily. Be gentle with it…it has a flakey texture so don’t be overly vigorous with it. The recipe below is simply an introduction to enjoying this amazing Fungi. Whatever your choice of foods you just can’t miss out on how delicious and beneficial this… enjoy!

You will need the following:

  • 1 punnet of fresh Lions Mane – sliced 5mm
  • 15mlts (Tablespoon of Olive Oil) + knob of butter
  • 1 Onion – finely chopped
  • Garlic – 1 teaspoon of lazy Garlic or 1 generous clove
  • Apple cider vinegar – splash to taste (teaspoon)
  • Flaked Sea salt – Truffle Salt (Waitrose) – generous pinch
  • Sweet or Hot Paprika (teaspoon)
  • Crème Fraiche or Greek Yogurt – generous dollop (tablespoon)
  • Chopped Chive

Method:

Heat a frying pan (high heat for 1mins then low) – add fats.

Add Onions – cook until translucent then add garlic.

Add Lions Mane – cook for 2-3mins until ‘golden’.

Add Splash of Vinegar, Salt and Paprika – soft simmer for 2mins.

Add other seasonings & spices – to taste & move gently for 2mins.

Add splash of Wine or Port.

Turn Heat off – stirring as heat reduces.

Add Crème Fraiche & Chives – mix gently for 2 mins.

Ready to serve with steamed Rice or Pasta of choice.
